Thank you for the ___. I liked it because ___. See you at ___. That is a complete note, a six-year-old can produce it, and the fixed shape removes the blank-page problem that is doing most of the resisting.
Two notes is five minutes. Twelve is an afternoon and a row. Spread over a week it stays a small routine task instead of becoming the thing the birthday is remembered for.
The recipient wants the child's note, not a corrected one. An adult who rewrites it has sent a note from themselves, and the child learns that their version was not good enough — which is the opposite of what you were teaching.
Around five or six for a copied short sentence; seven or eight for their own words. Before that, they dictate and sign it.
From a young child, absolutely — and it is often the one that gets kept on the fridge.
Within a week or two is a reasonable aim. Late and genuine beats prompt and ghostwritten.
